Tunisian-style Chickpea Salad

INGREDIENTS
- 2 cups of mixed greens (arugula, spinach, lettuce)
- 1 medium cucumber, diced
- 1 medium tomato, diced
- 1/2 cup of chickpeas, drained and rinsed
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh mint
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh basil
- 1/4 cup of diced red onion
- 1/4 cup of crumbled feta cheese
- 1/4 cup of diced Kalamata olives
For the dressing:
- 2 tbsp of fresh lemon juice
- 1 tbsp of extra-virgin olive oil
- 1 tsp of honey
- 1 clove of garlic, minced
- Salt and pepper, to taste
METHOD
Step #1: Prepare the vegetables
In a large bowl, combine the mixed greens, cucumber, tomato, chickpeas, parsley, mint, cilantro, basil, red onion, feta cheese, and Kalamata olives.
Step #2: Prepare the dressing
In a small bowl, whisk together the lemon juice, olive oil, honey, garlic, salt, and pepper.
Step #3: Dress the salad
Pour the dressing over the salad and toss to combine.
Step #4: Serve
Serve the salad immediately, garnish with additional herbs or feta cheese if desired.
