Experience the bold and complex flavors of Tunisia with this recipe for Tunisian Shakshuka. This version of the recipe uses traditional Tunisian spices, harissa and is sure to please your taste buds.

INGREDIENTS

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 2 cups of crushed tomatoes
  • 2 tbsp Harissa paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper, to taste
  • 4 eggs
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh cilantro
  • Feta cheese, crumbled (optional)

 

METHOD

Step #1: Prepare the vegetables

In a large skillet or pan, heat the olive oil over medium heat. Add the onion, garlic, red pepper, and yellow pepper. Cook for 5-7 minutes, until softened.

 

Step #2: Cook the tomato sauce

Add the crushed tomatoes, Harissa paste, cumin, coriander, salt, and pepper to the skillet. Bring the mixture to a simmer, and cook for 10-15 minutes, until the sauce thickens.

 

Step #3: Poach the eggs

Create four wells in the tomato sauce, using a spoon. Crack one egg into each well. Reduce the heat to low, cover the skillet and cook for 3-5 minutes, or until the whites of the eggs are set and the yolks are still runny.

 

Step #4: Finish and serve

Sprinkle the parsley, cilantro and crumbled feta cheese on top (optional) of the eggs and sauce. Serve with crusty bread or pita on the side.

Note that you can adjust the amount of Harissa paste to your preference, if you like it spicier you can add more, or less if you prefer milder flavors.
