INGREDIENTS

  • 4 chicken thighs
  • 2 tbsp harissa paste
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper, to taste
  • 1/4 cup of dry white wine
  • 4 red chilies, for garnish
  • 2 cloves of garlic, minced
  • 1 cup of chicken broth
  • 1/4 cup of heavy cream
  • 1 tbsp of butter
  • 1/4 cup of chopped fresh parsley

 

METHOD

Step #1: Prepare the marinade

In a small bowl, mix together harissa paste, olive oil, lemon juice, cumin, coriander, salt, and pepper. Add the chicken thighs to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes or overnight.

Step #2: Cook the chicken

Preheat a skillet or pan over medium-high heat. Remove the chicken from the marinade, shaking off any excess. Add the chicken to the skillet or pan, and cook for 6-8 minutes per side, or until fully cooked.

Step #3: Flambé the chicken

In the same skillet, add the 1/4 cup of dry white wine and bring it to a simmer. Carefully ignite the wine with a long match or a culinary torch and let the flames die down. Add the cooked chicken back to the skillet, spooning the sauce over the chicken.

Step #4: Prepare the creamy sauce

In the same skillet, add the minced garlic and sauté for a minute. Add the chicken broth and bring the mixture to a simmer. Let the sauce reduce for about 5 minutes, or until thickened. Stir in the heavy cream and butter and mix until the butter is melted and the sauce is well combined. Let the sauce simmer for a couple of minutes until it thickens. Stir in the chopped parsley.

Step #5: Finish and serve

Serve the chicken with the creamy sauce and garnish with the red chilies.

Note that you can adjust the amount of heavy cream and butter to your liking and also you can add some grated parmesan cheese for a more cheesy flavor.
