INGREDIENTS

  • 1 package of brik pastry sheets
  • 1 can of tuna in olive oil, drained
  • 1 large egg
  • 1/4 cup of diced red pepper
  • 1/4 cup of diced green pepper
  • 1/4 cup of diced onion
  • 2 tbsp of chopped fresh parsley
  • 2 tbsp of chopped fresh cilantro
  • 2 tbsp of chopped fresh mint
  • 1/4 tsp of ground cumin
  • Salt and pepper, to taste
  • Flour, for dusting
  • Vegetable oil, for frying

For the aioli:

  • 2 egg yolks
  • 1 garlic clove, minced
  • 1 tsp of Dijon mustard
  • 1/2 cup of canola oil
  • 1/4 cup of olive oil
  • 2 tbsp of lemon juice
  • Salt and pepper, to taste

 

METHOD

Step #1: Prepare the filling

In a medium bowl, combine the tuna, egg, red pepper, green pepper, onion, parsley, cilantro, mint, cumin, salt, and pepper. Mix well.

Step #2: Assemble the brik

Dust a work surface with flour. Place a brik pastry sheet on the work surface and place 2 tablespoons of the filling in the center of the pastry. Fold the pastry in half to form a triangle, then fold the edges to seal the brik. Repeat with the remaining pastry sheets and filling.

Step #3: Fry the brik

In a deep fryer or a deep skillet, heat the vegetable oil to 375°F (190°C). Carefully place the brik in the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to remove the brik from the oil and drain on paper towels.

Step #4: Prepare the aioli

In a blender or food processor, combine the egg yolks, garlic, Dijon mustard, canola oil, olive oil, lemon juice, salt, and pepper. Blend until the mixture is emulsified and thickened.

Step #5: Serve

Serve the brik warm, with the aioli on the side. Garnish with additional herbs or a sprinkle of smoked paprika.
