INGREDIENTS
- 1 package of brik pastry sheets
- 1 can of tuna in olive oil, drained
- 1 large egg
- 1/4 cup of diced red pepper
- 1/4 cup of diced green pepper
- 1/4 cup of diced onion
- 2 tbsp of chopped fresh parsley
- 2 tbsp of chopped fresh cilantro
- 2 tbsp of chopped fresh mint
- 1/4 tsp of ground cumin
- Salt and pepper, to taste
- Flour, for dusting
- Vegetable oil, for frying
For the aioli:
- 2 egg yolks
- 1 garlic clove, minced
- 1 tsp of Dijon mustard
- 1/2 cup of canola oil
- 1/4 cup of olive oil
- 2 tbsp of lemon juice
- Salt and pepper, to taste
METHOD
Step #1: Prepare the filling
In a medium bowl, combine the tuna, egg, red pepper, green pepper, onion, parsley, cilantro, mint, cumin, salt, and pepper. Mix well.
Step #2: Assemble the brik
Dust a work surface with flour. Place a brik pastry sheet on the work surface and place 2 tablespoons of the filling in the center of the pastry. Fold the pastry in half to form a triangle, then fold the edges to seal the brik. Repeat with the remaining pastry sheets and filling.
Step #3: Fry the brik
In a deep fryer or a deep skillet, heat the vegetable oil to 375°F (190°C). Carefully place the brik in the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy. Use a slotted spoon to remove the brik from the oil and drain on paper towels.
